I stayed in Paradise Island twice and had a great view of stars and milky way. But astrophotography is difficult at Maldive because you don't see the polar star. It's at equator.
My suggestion is not to stay around water villa at Paradise. Apart from its very expensive price each house has strong security light outdoor affecting your view.
At beach villa it's totally black at night provided that you are living far away from pier. You may have a feel of what class 1 star site is.

While Mr Chan is correct about polar alignment using Polaris, there is nothing to stop you to drift align. A rough compass and angle of elevation can be used to start the drift alignment procedure. It may take longer but if sky conditions are excellent, it is worth trying.
